The Most Important Meal: Delicious, Nutritious Breakfasts

With a single $25 grocery trip, we're going to enjoy great morning meals.

Countless studies have shown the health benefits that come from eating breakfast — and we’re not talking cinnamon rolls and donuts. Having a well-balanced meal in the morning not only gives you more energy, but it also helps to satiate your hunger, making it easier to avoid that mid-morning vending machine assault. If you’ve ever attempted to add healthier ingredients to your weekly shopping list, however, the likelihood is that your bank account paid the consequence.


Each day of this week, we’re going to provide you with a variety of deliciously nutritious breakfasts that can all be made with a grocery bill totaling under $25.


The best part? At the end of the week, you will still have enough for next week’s meals.


Here’s what we bought on our shopping trip:


 


Grocery Store: Trader Joe’s, 2001 Greenville Ave.


Receipt: $24.56


Grocery List:



  • 3 bananas, ripe

  • Creamy or crunchy all-natural peanut butter

  • Ezekiel flourless bread, cinnamon raisin

  • One dozen large eggs

  • Cheddar cheese

  • Skim milk, 1 quart

  • Quick-cook steel-cut oats

  • Raw pecan pieces, 8 ounces/li>

  • One avocado, ripe

  • One plum tomato

  • Maple agave syrup


Prepping Tips:



  • Cut banana into slices and freeze

  • Stir peanut butter

And now, our first meal:


 


Egg-White Omelet with Banana


4 egg whites (protein equivalent to 2 large eggs)
1 tomato
1/4 avocado, sliced
1/4 cup shredded cheddar cheese



  • In a small bowl, combine egg white from the eggs. The yokes can be discarded with the shells.

  • Into a small greased pan on medium-high heat, pour the egg whites. Once the bottom half of the egg has cooked and is solid, place chopped tomatoes and cheese on one side of the egg. Then, with a spatula, fold the side of the egg without the tomatoes and cheese onto the other half.  (Imagine making a quesadilla.) Let this cook for another minute or two, until you no longer see any runny egg whites.

  • Place sliced avocado on top and serve with a banana.
