Executive chef Kevin Ascolese has created three lovely dishes with these delicate fungi from the countryside in Northern Italy. Ascolese offers Four Cheese Ravioli ($15), Alba white Truffle Chanterelle Pizza ($20), and Fresh Saffron Fettucine with shave Alba white truffles($22). Yes, you read those prices right.
