Josh Valentine is Building a Restaurant in Oklahoma. Literally.

A few months ago, Josh Valentine left his pastry cheffing duties at FT33 to return to Oklahoma, his home state. Turns out he wasn’t much of a Dallas guy. Sad. We lost the biggest bacon-enthusiast in our city.

The Top Chef: Seattle contestant has since become executive chef at The George: A Prime Steakhouse, named after owner Kevin George, in Oklahoma City. Valentine is, obviously, going to be cooking a lot of meat. And surprise! He will also have some vegetarian items on The George menu as well. Change of heart? I think so. According to this article in the Oklahoma Gazette, “construction began last week on the restaurant, which is slated to open in the fall, just before the holidays.”

One thing the article fails to mention is why in thunder’s name Josh Valentine is wielding a power tool instead of a knife. When did the guy go into construction work? Man, Valentine is multi-talented. He’s great at making his whiskers so whisker-y, he does pretty well in the kitchen (as long as he’s not making breakfast sushi), and he’s handy with the tools. Gotta hand it to him.
