The bright lights of the Paris fashion scene might be in her rearview mirror, but former model Deborah Rogers still practices what she picked up in France. Because when she wasn’t posing, she was learning the traditional techniques of making French farmstead cheeses. Today she lives on 45 acres eight miles from downtown Fort Worth with her husband and a herd of French Alpine goats. She grazes them on the banks of the Trinity River. And every morning she greets her goats by name, milks them, and makes small batches of Deborah’s Farmstead Cheese by hand ($6.99 per quarter pound). Her newest mold-ripened creation, Birdsong, is a Camembert-style cheese with a light-as-mousse texture. Available at Central Market and Roy Pope Grocery (2300 Merrick St., Fort Worth. 817-732-2863).
