Chef Omar Flores Takes Over Spork Location in North Dallas

Chef Omar Flores has taken over the space formerly known as Spork. What will his restaurant be? He'd like to hear what you want.

Once the permit was pasted on the door of the recently closed Spork Restaurant in far North Dallas, word spread through the neighborhood. The tenant? Omar Flores, the popular chef behind Casa Rubia in Trinity Groves. Flores is hot. He’s a semifinalist for Best Chef in the Southwest in this year’s James Beard Awards.

Flores hasn’t flushed out many of the details for what he plans to do with the place. “As of now we’re going to give the place a minor face lift, shrink the enormous patio and make it not look like a Sonic,” Flores says. He promises more info next week.

A lot of readers think that corner is jinxed. Spork didn’t last a year and Pat’s & Mike’s didn’t stay open much longer. However Coffee House Cafe and Cadot are doing good business. Seems odd that two casual burger joints couldn’t attract the families that live in the area.

I wish he’d open a Driftwood there.
