On a recent trip to the JW Marriott San Antonio Hill Country Resort I took part in a tequila tasting hosted by the resort’s Tequila Ambassador, Will Peniche. The property’s restaurant, Cibolo Moon, is committed to tequila and earned a special Distintivo T Agave de Oro award from the Consejo Regulador del Tequila (Regulatory Council of Tequila) the for its level of commitment. The CRT regulates every step of the production in the tequila industry to maintain standards. They also promote tequila culture, quality, and education. In order to receive this award, Cibolo Moon’s staff must take an 8-hour course on tequila followed by an exam. Eighty percent of the staff has to score 80 (or above) out of 100 points to acquire certification. Cibolo Moon is one of only 15 restaurants in the United States, and the only one in Texas, with the CRT’s Distintivo T Award. Listen to Will.
