Caddo Lake is unlike any other lake in Texas. Not only is it the only naturally occurring body of water in the state, but it is also a beautiful maze of interconnected waterways forming interlocked channels, ponds, swamps, and bayous. The ubiquitous moss-covered cypress trees create a mysterious backdrop for those willing to steer through the narrow “boat roads” and get lost in the natural beauty of flora, fauna, and wildlife.

If you fish, you’d better bone up on your knowledge, as there are 71 species swimming in the waters of Caddo. Nature lovers will be overwhelmed with the varieties of trees, alligators, beavers, lotus and lily pads, turtles, and frogs. The freshwater marsh is a birder’s paradise. Grab a checklist at the Caddo Lake State Park headquarters and tick off wood storks, pileated woodpeckers, Kentucky warblers, and the ubiquitous great blue herons. If you aren’t overly adventurous, you can hire a guide to show you around the 25,000-acre lake.

Once you’re off the water, don’t expect to find much wildlife. Of any kind—bars and restaurants are few and far between. Consider renting one of the rustic cabins or houses around Uncertain or stay in the nearby historic town of Jefferson, where you can relax in the cozy confines of the Excelsior House Hotel. They have been welcoming famous guests such as Lady Bird Johnson, Ulysses S. Grant, and Rutherford B. Hayes since they opened in the 1850s. The rooms drip with Southern charm: the furniture is antique; the trims are lace.

From here you can wander over to Austin Street Bistro for some fancy vittles such as a smothered pork chop or meatloaf. Leave room for a piece of homemade almond pound cake with toasted almond strudel and maple butter.
