WHAT’S COOKING FROM ‘THE MARCH’

Most Dallas Hispanics not only marched yesterday, they took the day (and night) off from work. This so-called “brownout” left local restaurants scrambling. At one hotspot, Cuba Libre on Henderson, none of the regular chefs, waitstaff, or busboys showed up, so celebrity chef Nick Badovinus actually had to cook in his own restaurant. Imagine that! According to one waiter, “the crowd was light enough that we all stepped in and managed things,” and “the food presentation by Nick was first class.” But, he added, “Believe me, we’re all very glad to see the regular crew back at work!”
