Drink This Now: The Blue Hawaii for Two at Remedy

This festive cocktail is perfect for springtime sipping.

There isn’t a description listed on the menu for the Blue Hawaii for Two at Remedy. “It’s like a trip to a magical place,” my server explains before listing off all of the ingredients that make up the restaurant’s new cocktail. The festive drink is a bright and refreshing mix of rum, Triple Sec, fresh lime, pineapple juice, coconut, fauxgeat, and dash of blue food coloring. (Fauxgeat is similar to orgeat, except it uses coconut instead of almonds.)

As the name implies, the Blue Hawaii for Two is meant for sharing. The cocktail is served in a soda siphon draped in a pastel lai, and if that isn’t attention-grabbing enough, your server will likely insist on spraying the misty blue elixir into your glass for you. (If not poured properly, the drink can splatter, and the blue dye will turn any shirt or frock into something inspired by Jackson Pollock.)

At first sip, my lips were greeted by coconut-flavored baby blue foam similar to the texture of meringue. Underneath the foam sits a tropical refresher that’s conducive to lounging on the restaurant’s patio — but don’t get me wrong, you can absolutely taste the rum.

According to beverage director Máté Hartai: “A happy accident turned our homemade coconut cream into an airy cloud, that in turn influenced our entire beverage program’s texture-based focus. It’s a rare and special combination that symbolizes Remedy’s lighthearted charm and humor. ”
