The ACS held its annual cheese conference last week in Burlington, Vermont. Our local whiz, Paula Lambert, was there along with Deborah Rogers from Deborah’s Farmstead Cheese in Fort Worth. Deborah took second place in the Farmstead Goat Cheese Open Category while Lambert popped up and down like a jack-in-the-box as she gathered a total of seven ribbons. Her Mozzarella Company won: 2nd place for pecan praline mascarpone; 2nd place for rosemary Montasio; 2nd place for scamorza; 2nd place for smoked scamorza; 3rd place for caciocavallo; 3rd place for goat’s milk ricotta; 3rd place for queso blanco with chiles. Congrats to these fine cheesemakers. If you haven’t tried Paula’s pecan praline mascarpone, you have not lived right.(Note: it is the easiest party desert ever.) I love cheese. Tra la.Â
