joanneNoted Dallas chef Joanne Bondy has just signed a lease at the Dallas Farmers Market to Open Stocks and Bondy.

Bondy helmed the kitchen at Monica Greene’s popular Ciudad, considered one of the best restaurants in America when it opened in 2001, and at Old Hickory Steakhouse at Gaylord Texan.

“Stocks & Bondy will provide our customers better nutrition, enhanced flavor, and convenience through our passion for customer service. We will help you “stock up” your kitchen and give you the culinary support you may need.”

She will be presenting a unique concept, branching out into homemade products. She and her culinary staff want to provide home cooks and local chefs with classic and modern sauces and stocks made from all-natural, sustainable ingredients. Expect hand-pulled proteins, soups, and specialty items with diverse regional flavors.

“I have enjoyed farmers markets where ever I have lived and traveled…My involvement at the DFM began years ago when, as the Chef/Partner of Ciudad, I participated in Days of Taste, which helped connect elementary school kids with farmers, bee keepers, chefs, fresh herbs, cooking and many special people concerned with healthy eating habits. I also have participated in the Farmers Market Chefs’ Cooking Classes supported by the AIWF. The roster of chefs throughout the year offers a variety of classes on cooking while attendees get to taste the chef’s preparations throughout the class,” Bondy said.

Chef Bondy will be continuing classes this fall at the Dallas Farmers Market. Kids’ cooking classes will run on Saturday mornings, and will “develop young chefs with farm-to-table educational experiences.” Customizable adult classes are in development as well.

“I am excited to be in the Fall series. My class will be Saturday, November 22 about “Maple Syrup: The Grading Truth – Sweet and Savory.” Most of my recipes will include my upcoming Stocks & Bondy classic stocks and signature sauces. The Dallas Farmers Market will be my new home and a whole new journey starting March 2015. I look forward to moving into ‘The Shed’ and sharing the fun and beauty of local, natural, quality ingredients with our community and visitors to the Dallas Farmers Market.”
