Carl & Vicki Poole on Their Outdoor Living Space

When the Poole’s bought their sprawling Southlake home last December, they envisioned a comfortable outdoor living space that they and their three children could enjoy together.

When Carl and Vicki Poole bought their sprawling Southlake home last December, they envisioned a comfortable OUTDOOR LIVING SPACE that they and their three children could enjoy together. Carl, president of Fossil Resources, an oil and natural gas exploration outfit, chose Ultimate Landscape Concepts to create the backyard retreat of his dreams, complete with a stone pool, covered entertainment center, and state-of-the-art outdoor kitchen. Since the project’s completion in July, Carl and Vicki have taken full advantage of their built-in, stainless steel Turbo STS gas grill and Weber-Stephens Smokey Mountain smoker, hosting family barbeques and baseball parties for their kids. “We spend a tremendous amount of time out here because we love the outdoors and really wanted a place to entertain family and friends,” Carl says. Most Saturday nights, the Pooles can be found enjoying New York strips off the grill along with their signature side dish: grilled jalapeño peppers stuffed with cream cheese and wrapped in bacon. It’s the perfect recipe, they say, for a fun summer evening. “We don’t have to fight the crowds,” Vicki says. “We can just enjoy a casual family meal right here in our own backyard.”
