Iris owner, Susie Priorie, spills the beans on her new chef:

Yeah, Russ is retiring from kitchen work (bad knees, etc) and going to just do his teaching gig at AIMS. He will still pop in periodically (we hope) to work on special projects or off-site catering. Matt Bresnan, the Tasting Room chef at LOLA, is our new chef and we love him. He’s young, innovative, energetic and perpetually good-humoured. It’s still American [food] at its best, but we will change the menu more often and try to go for more of the small, local purveyors for our ingredients. IT was a win-win for all of us.
