It seems like it was only yesterday when we sat at a booth at Fireside Pies on Henderson and watched then chef Nick Badovinus climb to the roof to pick basil for a pizza. But it wasn’t yesterday, it was over 12 years ago and a lot of that time has been spent writing about the bourgeoning artisan pizza business in Dallas.

Yesterday Fireside Pies announced Fireside Pies Pronto, a grab-and-go pizza shop. The first location is at Uptown Urban Market where Dallas restaurant veterans such as La Duni, Gilbert Garza (Suze Restaurant), and Tiffany Derry (The Cupboard) are doing business. The focus is on carryout so expect a limited menu that consists of “popular starters, pies, salads, and desserts. Fans can order menu favorites such as the Molten Meatballs, Texas Bibb Salad, Triple ‘Roni and Vanilla Bean Cheesecake.”
