Richard Graff caught my attention when he was the chef de cuisine at Cook Hall in 2012. He’s incredibly talented and creative. He caught the attention of Richard Rogers and Allison Yoder, the co-owners of Gemma. They hired Graff to be their executive sous chef.

This morning Meddlesome Moth announced the hiring of Graff. He will be oversee the menu at Meddlesome Moth and, in time, add his touches to the list of shared plates, meat pies, fish and chips, and other sophisticated gastropub cuisine paired with the best beer selection in Dallas.

“We are very excited to have Chef Richard in the kitchen at Meddlesome Moth,” says Shannon Wynne who owns and operates the restaurant along with partners Keith Schlabs and Larry Richardson.  “We value his talents and experience and look forward to seeing his influences on the Moth menus.”

Graff takes over the kitchen on Monday, July 27.
