Kevin Garvin is somewhat of an unsung hero of fine dining. He was hired by Neiman Marcus in 1994 to modernize the Zodiac Room, now The Zodiac Restaurant. Talk about a challenge. For twenty years, Garvin, the VP of food services at NM,  has manage to balance the iconic popover-strawberry-jam-chocolate-chip-cookie selections with fresh new ideas.

Corporate executive chef Anita Hirsch has also contributed her fair share of recipes that match the quality you’d expect from Neiman Marcus.

Today, Garvin and company, release Neiman Marcus Cooks, a revised edition of the 2003 NM cook book. I’ve browsed the pages filled with classics–popovers, chicken salad, monkey bread, a tribute to Helen Corbitt—and discovered some gems such as Hirsch’s chopped liver with pickled red onions. My only disappointment was the presence of truffle oil in several recipes. However my family can expect to find the Gorgonzola walnut tartlets on our holiday table(s).

Garvin coauthored the book (his third with NM) with John Harrisson and Jody Horton photographed the food in all of its glory. Neiman Marcus Cooks is now available at all NM stores, book stores, and Amazon for $45. Garvin will be signing books at the NorthPark store from on Tuesday from 11AM until 4 PM (NorthPark Mermaid Bar) and again from 5-6:30 in ladies shoes.
