Quick Report: Central Market Cooking Class

Last night, the Sig-O and I attended a cooking class at Central Market in Dallas. The class, “From the Hills of Tuscany”, was led by chef Gina Stipo. Gina runs Ecco la Cucina, a cooking school outside of Siena. Last October, I took a group of foodies to Gina’s weeklong program. The resulting story of our eating escape will run in the March issue of D Magazine.

The SRO crowd at Central Market was treated to timbale di pecorino Toscano con insalata di pera, zuppa di funghi, ragu di cinghiale con gnocchetti di semola, and crostata. Each course was paired with a different wine from Banfi.  Several Dishers attended. One reports:

Not only do I plan to use a lot of her recipes and suggestions (this weekend for a dinner party I am doing!) I am working hard to convince my husband (recession or NOT) that we need to go to Tuscany and take her classes!   She is so refreshing. And I am SO agree with her – my first choice for dessert is always [more] wine!
