For dinner tonight I made a cauliflower and chicken curry and added the leftovers rapini I made yesterday. I first cooked two chicken breasts with bones (covered, almost steamed). I took them out and shredded one of them for the curry and kept the other one for other meals. Added grated fresh ginger, turmeric and garlic to the pan, added one head of cauliflower (florets), curry powder, coconut milk, the shredded chicken, the leftover greens, salt and pepper to taste. Finished with 1 tbsp of arrowroot flower. It was yummy. 😇 I’ve been writing this article for tomorrow’s newsletter and it became so long, there is no way I could put it in one email. At the moment is called ‘11 Steps to A Easier Plant Paradox Journey’, but that might change. Sundays are for pizza 🍕🍳 • • • A quién no se le antoja una pizza pa’ el desayuno y más si es saludable? ============================ Pues esta mañana batí huevos y yogurt griego que me sirvieron pa’ la base de mi pizza. Esta mezcla la puse en el sartén bien caliente y con un poco de aceite de coco, me aseguré de que quedara una capa delgada. Agregué champiñones, pimentones y tomates. Tapé por unos minutos y cuando estuvo lista le puse el cilantro 🌱 ========================= Todo entra por los ojos y para mi esta fue una pizza perfecta para desayunar.
