The Dallas Drink: Mariano’s Papa’s Margarita




Visit Mariano’s Hacienda to taste the frozen margarita that started it all. Or, make their on-the-rocks version at home.

2 ounces of Herradura Silver 100% agave tequila
¾ ounce of Cointreau
2 ounce of lime juice
2 wedges of limes (cut into 4 small pieces)
3 teaspoons of simple
syrup or agave nectar or ½ ounce of sugar (adjust to taste depending on tartness of lime)

Step 1: Rim a 10-ounce rocks or old-fashioned glass with a lime wedge and dip in salt.

Step 2: Muddle lime wedges with simple syrup. Add tequila, Cointreau, and 2 ounces of lime juice. Fill glass with crushed ice. The secret is in the muddling, because it releases the oil in the lime rind.

We sent out an undercover tester to find local charcuterie and cheese spreads that would please even the most cultured caseophile. Hands down, the winner was Oak Lawn’s own Scardello. Serving 14 to 20, this board includes Molinari Finchio pork from San Francisco, Italian prosciutto pistachio pâté from Olympia Provisions in Oregon, and five different artisanal cheeses. Dried fruit and baguette slices round out the arrangement. Place orders at least 48 hours in advance. $100 before tax.
