We were initially skeptical about the concept of champagne served over ice. But our doubts were unfounded. In fact, it’s so fabulous there’s even a name for it. Piper-Heidsieck calls it the Piscine (French for swimming pool) and made a sexy red glass to show it off (above). The key is to freeze Piper-Heidsieck Brut Champagne ($32.99, 750 ml) into ice cubes and serve the refreshing sparkler chilled. It’s light, crisp, and festive. Can you think of a better way to stay cool this summer? Moët & Chandon even has its own version. Pour Moët & Chandon’s Nectar Impérial ($47.99, 750 ml) into a highball glass over ice (doesn’t have to be champagne ice cubes) and top with a squeeze of fresh lime juice. (Of course you can use any type of sparkling wine you want.) Piper’s even thought of a way to keep your bubbly cool when you’re dining in the park al fresco. Pick up a Cool Box (left), which will keep your champagne chilled for up to four hours. The packaging doesn’t cost extra, so it’s the same price as if you bought the bottle of brut on its own. Added bonus: it’s reusable.
