Why Doesn’t the City of Dallas Promote Local Chefs

A long, tall Disher with a nose for news, asks this question:

Hey, I read this article on Houston taking their top chefs to New York to promote them. How come nobody around here ever does that?

Hmm, I think Laura Miller did when she was mayor. In fact, I know she did cuz our own Tim Rogers went with the group. It was Timmy’s first time in an airplane so he doesn’t remember much of what happened. But, here’s the deal: why would you take your chefs to New York and have them cook for the New York media? Like they care? You think I’m a food snob? The New York-LA-Las Vegas-centric culinary world is a tough one to break. I’d put our top chefs against many of their “rivals” in other cities any day of the week. Our time is coming. But instead of taking the chefs, I would bring the critics in to Dallas, give them a credit card, and send them out on their own with a list of things to try. Let them see the whole scene.
