The Most Important Meal: Peanut Butter Toast

Day 2 of our weeklong salute to breakfast.

Welcome to the second day of our demonstration of how there’s no excuse not have an affordable, nutritious breakfast to start your day. We went to Trader Joe’s on Greenville Avenue in Dallas, bought less than $25 worth of groceries, and are making great meals all week (with some leftover ingredients to boot.)

Peanut Butter Toast with Banana and Over-Easy Eggs

One piece of Ezekiel bread
Peanut butter
Half a banana, sliced
Two large eggs

  • In a small pan on medium heat, break two eggs. Cover.
  • Meanwhile, toast the bread.
  • Keep an eye on the eggs until the yokes feel somewhat firm and the egg whites have cooked completely.
  • Once the toast is done, spread with peanut butter, and place bananas on top.
