Mudhen Meat and Greens Opens Monday

After many long delays, the enlightened vision for the Dallas Farmers Market is finally coming to light. The next opening will be Mudhen Meat and Greens, which debuts on Monday.

Mudhen_diningAfter many long delays, the enlightened vision for the Dallas Farmers Market is finally coming to light. The next opening will be Mudhen Meat and Greens, the newest creation from the brains of restaurateurs Shannon Wynne, Keith Schlabs, and Larry Richardson (Meddlesome Moth, Lark on the Park, Rodeo Goat, Bird Café, etc.).

Executive Chef Suki Otsuki menu offers healthy choices such as lower carbohydrate offerings and a larger selection of “pasture-raised land meats, ocean-raised fish and healthy greens, organic and GMO-free whenever possible.” Mudhen uses its location at the Dallas Farmers Market to procure fresh, seasonal produce. They take nutritional values of the food seriously. Sundrops founder Mark Herrin consulted on the project.

And the press release sings:

“Our goal was to open a restaurant with delicious food that also offers options for many folks that try to follow a healthier lifestyle,” says Shannon Wynne. “One of our soul-cries is “This is not a Dress Rehearsal, Eat Right”.   All of the dishes will not appeal to the ‘meat and potatoes’ crowd, but if we do it right most everyone should be able to find some good meats and greens on our menu.  If you love sweets, we may not be your cup of tea.”

Yes, there is a bar and a wine list, but there are also “fresh fruit juices, smoothies, coolers that are made to order and aguas frescas that rotate daily.” And, ‘natch, beer.
