Feast Your Eyes on the New Fried Foods at the State Fair of Texas

S'mores beer, anyone?

The State Fair of Texas is officially open for the season. Can you smell the Fletcher’s Corny Dogs wafting through the breeze? No? Well, sniff harder.

While there are many different ways to burn a hole in your wallet at the fair, if you’re anything like me, you’re spending your tickets on one thing: food. Sure, everybody who hasn’t been living under a boulder is probably familiar with this year’s Big Tex Choice Awards nominees. Chicken fried lobster with champagne gravy, anyone? But there are even more gluttonous delicacies available for consumption, including fried kennel corn, a deep fried bacon cheeseburger chimichanga, and s’mores beer. Yes, you read that correctly.

Here’s your guide to all of the new foods at the State Fair of Texas. Enjoy. And don’t forget to pack the Pepto.

Coco-Rita: Sip a frozen wine-based strawberry margarita or piña colada margarita out of a whole, baby coconut. The adult beverage is served adorned with a tiny umbrella.

Deep Fried Bacon Cheeseburger Basket: This twist on the classic cheeseburger is served chimichanga-style with bacon, crispy French fries, hand-battered onion rings, and fry sauce, all stuffed into tortilla. Bonus: it comes with dipping sauces.

Fried Tailgate Party: Baby back ribs, pulled pork, chicken wings, burger meat, cheese, jalapeños wrapped in bacon, and grilled sausage are stuffed inside biscuit dough and deep fried.

Fried East Texas Sausage & Pepper Jack Cheese on a Stick: Beer battered sausage, cheddar cheese, and jalapeños are loaded onto a stick and fried to a golden brown.

Fried Flan Cake: Chocolate cake and creamy caramel flan are layered, battered, and fried. The sweet treat is topped with whipped cream and caramel sauce.

Fried Kettle Corn: Balls of kettle corn are dipped in pancake batter and fried. The snack is drizzled with salted carmel sauce.

Laredo Dumpling: Ground beef seasoned with Mexican spices is wrapped in a dumpling and fried. The dish is served with fresh pico de gallo, sour cream, salsa, or cheese sauce.

Limited Edition Oreos: Options include red velvet Oreos dipped in a red batter, fried to a golden brown, and drizzled with cream cheese icing; cookie dough Oreos dipped in chocolate batter, fried to a golden brown, and drizzled with chocolate syrup and chocolate chips; and cotton candy Oreos dipped in pink and blue batter, fried to a golden brown, sprinkled with pink and blue candy sugar and served with a side of cotton candy.

Machete: A handmade corn tortilla is fried and stuffed with melted cheese and a choice of pork, spicy chicken, or ground beef.

Milk Chocolate Bacon on a Stick: A quarter-pound of bacon is threaded on a wooden skewer, deep fried, finished on the grill, and dipped in milk chocolate.

Pulled Pork Mash: Pulled pork is combined with layers of buttery mashed potatoes and topped with a pickle.

Pumpkin Spice Donut Chip: A deep fried donut chip is coated with pumpkin spice glaze. It’s served with a scoop of ice cream and sprinkled with cinnamon candied maple bacon.

S’more Beer: Milk stout beer infused with a hint of caramel, vanilla and a chocolate is topped with a large marshmallow.

Texas Fried Bacon Jalapeño Bites: Fresh jalapeños are combined with apple-smoked bacon, cream cheese, spicy sausage, and Parmesan. The mixture is breaded with jalapeño bread crumbs and fried. The dish is served with jalapeño lime ranch sauce.

Texas Bull Horn: Beef and pork sausage is mixed with jalapeño and cheddar cheese. The sausage is then stuffed in a hand-cut potato shell and deep fried on a stick.

Tropical Shrimp Kabob: Shrimp, onions, and pineapple are grilled and seasoned with a blend of island spices and a tropical glaze.
