While many food trucks are opening brick and mortar restaurantsOlivella’s has chosen to launch a food truck.

The menu is expanding and will include new items such as the Big Formaggi fried pizza, arancini, zeppole, and chocolate salami (served sliced with a mascarpone topping). It’ll be nice to have a Dallas-based authentic Italian service on wheels now that the Pompeii DFW truck is no longer rolling.

This should be an interesting truck with a large, wood-burning oven mounted to the back. The mobile kitchen is still being outfitted and is targeting a September 12 launch, just in time for football season. Bonus: Olivella’s plans to offer an exclusive pizza deal for all SMU athletic events.

Olivella’s currently has locations in Lakewood, University Park across from SMU, Victory Park, and is slated to open a Fort Worth outpost at Camp Bowie.
