“For years I have always shared my knowledge with customers on the history of chocolate. Chocolate has been a huge part of my life for more than twenty-five years,” says Andrea Pedraza. “This lecture at the Oak Cliff Cultural Center will allow me the opportunity to reach a larger audience – one with whom I can share my passion.”

Zach Townsend, chocolatier at Pure Chocolate Desserts by Zach, is helping to bring

pastry author and tea expert Robert Wemischner to Dallas. Wemischner will be at Stephan Pyles on Feb. 12th where he’ll do a class consisting of tea enhanced dishes — salad, scallops, and smoked chicken wraps — plus a “Chocolate Melting Moments Torte (flavored with Assam tea)” that would be great for Valentine’s Day. The cost of the class is $125 + tax and includes the opportunity to buy Robert’s book The Dessert Architect. Wemischner will do a book signing after the class. Contact Lisa Moore at [email protected] or phone 214-999-1229, ext. 102 for more details on tickets to the event.

Chocolate Secrets will be having a four course dessert tasting on Friday February 11th – Monday February 14th with live jazz. $98 per couple includes two dessert tastings, a bottle of champagne, and a take home gift.

Chocolate Secrets also has a new Coco-Couture line with chocolate handbags and shoes for Valentine’s Day.

Arturo Romanillos, Program Chair – Pâtisserie & Baking at Le Cordon Bleu College of Culinary Arts, will be teaching a “Chef’s Series” class on Saturday Feb 12th. During the hands-on session students will participate in production techniques such as making hand-dipped candies, chocolate Truffles, and molded holiday confections. Aspects of how chocolate is made, how to temper, and theoretical application will also be discussed.

Valentine’s Day Chocolates; Truffles and More – February 12, 2011 @10AM – 1PM

ML Dubay of Toffee Treats has created a delicious new item for Valentine’s Day. The luxurious white chocolate lollipops sprinkled with dried red cranberries, almonds, cashews, white raisins and a scattering of pecans with a touch of salt deliver the perfect sweet & salty sensation.

Nib Chocolates has expanded its selection at Cultured Cup. Chocoatier Steve Smith has included, among other new creations, his “43rd Blend Tea Truffle” which is flavored with the tea blend created for the 43rd President and his wife created by Cultured Cup. The truffle has notes of blood orange and fresh strawberry and is delicious no matter what your political party affiliation.
