Castle Hills Village Boasts New Local Cheese Shop

While you were all busy focusing on Frisco and Plano as the next culinary centers, the folks in Lewisville were silently developing a site devoted to small local businesses. The Castle Hills Village Shops, located five miles west of the Tollway at the intersection of Lake of the Lake Boulevard and King Arthur Boulevard, is already home to TKO Libations, PI.E 3.14 Everyday Eatery, T.B.D. Kitchen, Kanzi Sushi & Hibachi, Z’s Wok, and Sophia’s Kitchen.

Today comes word that The Salty Cow, an artisan cheese and provisions shop, is open for business. Which is great for all of you who live closer to Oklahoma than downtown Dallas. Owners Jennifer Gentry and Harold Gonzalez have curated locally sourced gourmet cheeses, meats such as prosciutto, jamón serrano, salami and pâté, and provisions such as dried fruits, spreads, oils, crackers, coffees and teas. Also on the menu is gourmet popcorn from Hico Popcorn Works (flavors such as toffee, chipotle ranch, and dill pickle) and sweets from Wiseman House Chocolates, also located in Hico.

Oh, I almost forgot the cheeses:

The Salty Cow has a varied menu of cheese and charcuterie boards and offers tailored platters and gift baskets for every occasion. The Salt Cow “Best of Texas” cheese and charcuterie platter, for example, features four cheeses and two meats including a rich and mellow Bosque Blue cheese, a sweet and nutty sheep gouda and a jalapeno cheddar, all from the Veldhuizen Family Farm in Dublin, Texas; a Swiss-style Van Sorman from Brazos Valley Cheese; along with jamon serrano, a country ham aged for 18-20 months; and a mildly spicy Calabrese salami. The Salty Cow “Swanky” board includes a fresh boschetto infused with rare white truffles and the “World Traveler” board includes a Lou Bergier Pinchin, a creamy tomme-style cheese with notes of mushroom.

And they are a neighborly business. The Salty Cow has partnered with TKO Libations craft brewery and offers beer and cheese pairings.
