Yims Foods is a Dallas-based company which was founded in 2011 by Camille Cortinas. Cortinas is quick to explain how much her family and friends have helped her along the way. Her mom, Judy, is the queen bee of jellies, jams, and preserves, while Camille’s friends help handle sales and graphics.
The company itself was named after a made up language used between Camille and her sister Megan when they were younger. “Yims,” in their language, meant “you.” So all of the work the Yims family puts into their products is for you, making the name a perfect fit.
They offer small batch pickled vegetables, preserved fruits, jams, jellies, and salsas. I first came across Yims products at Single Wide bar on Lower Greenville. The offerings at Single Wide, and sister bar Double Wide, are just a fraction of the products made by Yims, but a definite must if you are craving something salty to nosh on with your beer. Both bars carry fresh tomatillo and red salsas, and a variety of pickled products including brussels sprouts, green beans, and spicy carrot relish.
The brussels sprouts are cold, crispy, and perfectly pickled with carrots, garlic, dill, mustard seeds, peppercorn, and coriander. The sweet side of Yims has offerings such as, cranberry jelly, mandarin orange marmalade, blueberry preserves, and raspberry jam. The jams and jellies, along with most of their other products, can be purchased on Saturdays at Good Local Markets, White Rock Green Spot, and White Rock Lakeside.
