I was fact checking some recipes for D: The Cookbook and chatting with Central 214 chef Graham Dodds. After finalizing the details of his cabrito recipe, Dodds said, ever so casually, “I just gave my two weeks notice.”
Dodds, who is credited with being one of the first chefs to spotlight local products, is signing up for Tristan Simon’s Consilient Restaurant group. Simon is heading up several new projects downtown and the focus of his new restaurants is local and chef-driven. “This is a huge opportunity for me,” Dodds says. “I respect his values and his support of the local movement.” His last day at Central 214 will be October 1. Dodds will join Jason Ferraro in the kitchen at Hibiscus until he gets his real assignment.
[Update: Dodds says his sous chef, Eric Peters, will run the kitchen while the restaurant looks for a new chef.]
