Easter not only launches the season where we can officially wear white, it is also the real launch of spring. If you are looking for a pastel pink, mint green or baby blue cocktail to enjoy with your Easter brunch this weekend consider one of these tasty treats. Though not as good as a chocolate bunny…what is? These are a great way to leisurely enjoy a warm spring afternoon.
Easter Bunny Cocktail
MARTINI® Prosecco
1 scoop raspberry sorbet or 1 scoop lemon sorbet
2 or 3 blueberries
Directions – Add raspberry or lemon sorbet to a chilled champagne flute and fill with MARTINI® Prosecco. Garnish with blueberries.
Raspberry Baret
1½ oz Cointreau
½ oz fresh lime Juice
3-4 fresh raspberries
1 egg white
Directions – Combine all ingredients in mixing glass, dry shake, then add ice and shake for a hard 10 count to emulsify the egg white. Strain over fresh ice into highball glass and top with Club Soda. Garnish with 3 skewered Raspberries.
Basil Expedition

2 oz. Brugal Extra Dry Rum
1 oz. Lemon Juice
.5 oz. Maple Syrup
1 Tangerine
3 Basil Leaves
Directions – Muddle Tangerine in a cocktail shaker. Combine Brugal, Juice, Syrup and Basil on top of tangerine. Shake with ice, and fine strain into a Coupe. Garnish with a Basil Leaf.
Afternoon Soiree
1 1/2 oz Camarena Silver Tequila
1/2 oz Lemon Juice
1/2 oz St. Germain Elderflower Liqueur
2 Cucumber Wheels
4 Mint Leaves
2 oz Ruffino Prosecco
Directions -Muddle cucumber and mint leaves in a mixing glass. Add Camarena, lemon juice, St. Germain and ice. Shake and strain into a Champagne flute. Top with Prosecco. Garnish with cucumber slice.
