Talented chef Omar Flores of Casa Rubia is literally and figuratively branching out. After we announced Flores had taken over the space formerly known as Spork, many people speculated he would open a tapas restaurant.

I guess he figured out North Dallas doesn’t need a tapas restaurant, that’s a crowded field north of LBJ. Instead Flores is jumping on the fried chicken train moving through town. Expect a redo of the building with a sign out front that reads Whistle Britches. The menu will be finalized next month, but basically it will be a fried chicken sandwich spot. Expect whole fried pieces, biscuits, pies, custards and shakes.

‘Natch there will be a big beer selection and crafty cocktails on tap. Flores says if we all cross our fingers he’ll be open in early June.
