Redrock Canyon Grill is known for its sophisticated, yet comfortable interior complemented by a lively exhibition kitchen and friendly Texas hospitality. Catch up on the latest with friends while watching chefs prepare Southwest favorites, such as Wood-Fired Rotisserie Chicken and the signature “Texas” Stuffed Poblano appetizer. Fresh is key at Redrock Canyon Grill, as all dressings and sauces are made from scratch each day, vegetables are freshly chopped every morning, and each steak is carefully hand carved.

Lighter lunch favorites at Redrock Canyon Grill include the Nice Little House Salad—mixed greens, goat cheese, house-made cornbread croutons, and spiced pecans–and the Redrock Salad tossed with rotisserie chicken, corn, Campari tomatoes, dates, avocado, mixed nuts, and champagne vinaigrette. Pair them with a cup of house-made soup, and lunch is served.

Then there’s the Rotisserie Chicken Chop Salad piled high with black beans, tomatoes, corn, tortilla strips, cheese, avocado, and barbecue chipotle bleu cheese. The Kale & Rotisserie Chicken Salad is made with fresh herbs, mixed nuts, and honey-lime vinaigrette, and the North Coast Salmon Caesar Salad puts a twist on the traditional Caesar with sweet remoulade and fresh avocado.
