TASTING THE TOWN

Chilly Soups of Summer



Beats me why so many peo- ple persist in considering soup a strictly cold-weather comfort food-some of the best soups 1 know can only be made from summer’s fresh bounty of fruits and vegetables. And many of these are at their refreshing best served cold. Here in High Sweat Index country, fewer are offered than should be; but with the help of a few conspirators among Dallas restaurateurs, we’ve managed to come up with half a dozen departures from the beloved favorite vichyssoise.

Bagelstein’s borscht. There are almost as many recipes for this venerable beet soup as there are kosher cooks. But Bagelstein’s Deli out-simplifies all the rest: its borscht is all beets, diced in their own simmered broth and seasoned with nothing more than the merest sprinkle of salt and sugar. City Cafe’s crab, spinach and corn. Marty Schma’s regional American kitchen cooks up a chunky treasure of tastes with shrimp stock-clear and virtually fat-free. Well, except for a garnish of herbed crème fraiche. which I suppose you can do without, if you have the willpower. $5 a bowl. 5757 Lovers Lane.

Dream Cafe’s mango and avocado. Sheer poetry in pastels, this creamy cooler scrolls a delicate tracery of pale avocado green through the muted gold of tart-sweet mango. The visual effect; fresh and bright as morning sunshine. The flavor: ditto. $3 a bowl. 2800 Routh Street in the Quadrangle.

Gershwin’s chilled shrimp. New chef Denny Clark’s lunch menu features this one, involving multitudes of baby shrimp curled among zucchini and carrot slices in their own broth. For health, crunch and color, he adds a garnish of diced zucchini, red and yellow bell pepper and red onion. $2.60 a cup or S3.35 a bowl. 8+42 Walnut Hill.

Le Caviste’s yogurt-cucumber. Chef Scott Allen doesn’t have to heat up his kitchen for this one-thin-sliced cucumbers take a brief salt bath before being pureéd with lemon-spiked yogurt for one of the coolest summer sensations around. When this one’s not on the ever-changing menu, opt instead for his classic gazpacho. me Spanish original built on vinegar-splashed bread and chicken stock and every known summer vegetable, all coarsely pureéd. $3.50 a bowl. 5405 W. Ruby’s cantaloupe. Chef Brian Hennington does one of the more sophisticated fruit soups around a rare marriage of soulful ripe cantaloupe with crème fraiche and a surprise seasoning that brings the soup to a balanced perspective: cardamom, first cousin to ginger. $3.75 a cup or $4.25 a bowl. 1917 Greenville Ave.

Sipping Smart



Blended, shaken or concentrated, these frothy, fruity concoctions promise to be more than thirst quenchers. They’re also food for the brain. Called “Smart Drinks,” these vitamin-packed, alcohol-free libations are the newest, hippest cocktails to be sipping in the oh-so-safe “90s. Club Clearview boasts two Smart Bars inside its maze of miniclubs, with a menu of mind-improving mixers, including “Nuclear Fusion” and “Grey Matter.” Jeffrey Yarbrough. Clearview co-owner, says he’s selling about 200 smart drinks a night and expects the trend to grow. The smart drinks contain nutrients and a muhivitamin list of ingredients, from E to Zinc, mixed in a variety of fruit juices. Although at some clubs there’s no drink limit, the smartest smart drinkers usually stop at two, says Don Nedler, owner of the Lizard Lounge, which has been selling “think drinks” for six months. “If you drink 20 smart drinks, it’s not going to turn you into Albert Einstein.” says Phil Torian of Phil’s Natural Eats Cafe, whose vitamin-charged “Hangover Smoothie” was one of the first smart drinks in town. “It’s more like drinking too much coffee.” -Ellise Pierce

A Canton Jewel



For four days every month, Canton. Texas, erupts from its little country-town cocoon to become the center of the universe for flea market addicts. First Monday Trade Days is the Big Mama of them all, a 100-acre carnival of finds (everything from trash to antiques), folly (“Hey, look-a croquet set: four balls missing, but it’s only $5”) and fantasy (“Of course I can see it all in one day”). You can’t, you know, but you’ll try.

Even so, you’ll end the day footsore, longing for a real sit-down dinner someplace with soft booths and friendly service. Where do you find it?

Where the natives do, at Jewel’s Restaurant, the homey haven Wayne and Jewel Jeter have operated since 1981. What’ll you have? Damn near anything you can think of, from sandwiches and salads to mesquite-broiled steaks and surprisingly good Mexican food. Cordial, fleet-footed servers keep the iced tea flowing to the hordes who jam the place Friday through Sunday-but never on Monday; with characteristic small-town insouciance Jewel’s closes Monday, even on Trade Days weekends, to give those fleet feet their day off. New Restaurants



The Little Hut is a Hit



LA CHOCITA Richardson has long lacked a better-than-tolerable Mexican restaurant, but aficionados are now rewarded for their patience with the opening of La Chocita, one of the most enjoyable Mexican spots in the Metroplex. “La chocita” means “the little hut,” and the restaurant is certainly small (only nine tables). But there’s plenty of energy here, much of it provided by chef-owner Antonio Rey-mundo. Reymundo’s brother and silent partner is a stand-up comic, and compulsive wit seems to run in the family since Antonio delivers a quip with every dish.

La Chocita claims to offer real Mexican home cooking, but then, so do a number of restaurants. The difference is that La Chocita really does cook with the kind of care that distinguishes the best home kitchens.

Enchiladas and tacos may sound like the same old thing, but at La Chocita they are unlike any others we’ve been served in Dallas. The chicken enchiladas, four to an order, are served in a delicious red mole. The tacos de la sierra are actually very similar, using soft flour tortillas instead of the corn tortillas used in the enchiladas. Arracheras de Durango-the true ancestors of fajitas-turned out to be perfectly cooked strips of beef and chicken (the beef marinated in beer, Worcestershire sauce and lots of garlic; the chicken just lightly spiced). The carne asada tampiquena was a tender steak marinated in a similar mixture and cooked to juicy perfection. A daily special of carnitas (boiled and fried cubes of pork) topped with a spicy cilantro-toma-tillo sauce was the best version of the dish I’ve been served Dallas. Most of the main courses came with bowls of black beans and white rice subtly flavored with green chilis. Mom and Pop Pizza and Pasta



ANGELO’S The old Lakewood shopping center seemed endangered for a while, but it’s been revitalized lately by a number of new and interesting restaurants. The latest is Angelo’s, an update on the mom and pop Italian tradition, a cozy place featuring home-style American-Italian cooking.

We ordered a glass from the list of Italian wines, and the waitress brought a bowl of warm marinara sauce in which to dip the piping-hot and heavy sourdough garlic rolls. We liked the smooth and tangy red sauce-which was fortunate because we encountered it in several other dishes.

This is a spaghetti-based menu; there are seven variations along with several specialty pastas-lasagna. primavera, alfredo-and some chicken and seafood dishes. Baked pasta shells stuffed with ricotta were drowned in marinara sauce, The small pizza is actually large, the thin, crisp crust spread with the same tangy sauce and piled with lots of cheese. The buttery flavor of the sautéed mushrooms on spaghetti rounded out the tanginess of the now-familiar marinara sauce. The meatball sandwich was a joyously sloppy thing, a sliced hunk of bread barely holding the big, round meatballs (and more marinara sauce). Caesar salad comes with all entrees-cold romaine and homemade croutons tossed with a good creamy dressing.

A warm brick wall divides the dining room into intimate spaces. Unfortunately, the partitions also made it hard to catch our server’s attention, which we seemed to lose a lot especially toward the end of the meal. By the time we ordered dessert the kitchen had run out of the chocoletta cake (made from scratch), so we ordered the strawberry version that took quite a while to prepare. Two square layers of yellow cake with a dark puréed strawber ry coating were garnished with puffs of whipped cream, a heavy ending to the meal. 6341 La Vista. 823-5566. Mon.- Thur. A Beacon for Seafood Lovers



LAKEWOOD LIGHTHOUSE After our first visit to the Lighthouse we felt we’d made a great discovery. Here, we thought, was the seafood house we’d been waiting for. The setting is unpretentious (even a little rough), the service efficient and the menu beautifully simple; For a reasonable price you get the fish you want, cooked the way you like it, with a sauce of your choice. The mix-and-match menu implied that nothing would be cooked until you asked for it and that nothing would be offered that wasn’t fresh. And the results on the plate were perfect.

The blackboard selections on our first visit included amberjack, tuna, catfish, grouper, halibut, mahi mahi and rainbow trout, which you could have grilled, blackened, pan-seared, poached or fried. You picked your choice of sauce, which was served on the side-lemon butter, a short-on-the-basil cream sauce, searingly hot Thai chili-tomato relish, buerre blanc or lime-cilantro sauce. There’s a short list of reasonably priced wines-several available by the glass–and a longer list of domestic and imported beers.

The opener of New Orleans-style barbecued shrimp-messy, hot, dripping with butter-was good, too, and the chef strolled through the restaurant occasionally, checking to make sure everyone was satisfied, as we certainly were. (From our conversation, we learned that he had been sous chef at Cafe America before it burned down; that accounted for the precisely prepared fish.)

So we were looking forward to our next meal (and many more) at the Lighthouse and were surprised on our return by a bewildering series of blunders. There was no one to seat us when we arrived-finally a man at the bar waved a waitress in our direction. She took us to a table, then mixed up our drink order, forgot to check on a request and brought our appetizer after we had been served our entrees. The fish itself was again accurately cooked, but nearly everything else was unacceptable: The special soft-shell crab was covered in buttery crumbs, but the meat was tough as leather. The vegetables had worn out their welcome waiting on a hot plate-the broccoli was dark and shriveled on the edges, and the carrots were dry. Only the French-fried potatoes had survived.

Inconsistency is a common problem of new restaurants and often can be ironed out. Lakewood Lighthouse has proved the possibility of excellence, something most restaurants never achieve, so despite the disappointment, we’ll probably give Lakewood Lighthouse another try; the memory of our first meal there lingers despite the problems of the second, 6348 Gaston. 824-4500. BURGERS



D Revisits Hard Roch Cafe. This shrine to rock music history packs in tourists as well as locals, but the bus loads don’t seem to affect the food or the service. Appetizers are lackluster-I guess they want to be sure everybody orders a main dish so they don’t waste valuable space by grazing- but the main dishes are better than they have to be, given the audience drawn more by the memorabilia than culinary considerations. If you want to move on from the famous burgers and the pig sandwich, the cafe serves an exemplary club sandwich, on fat slices of home-style bread and with thick slabs of chicken breast. The Texas T-bone steak is grilled nicely, and even the barbecue is much better than merely acceptable. The ice cream desserts, like everything else, seem a trifle overpriced until you remember that you are paying for all those antiquated electric guitars and all those gold records of the Magical Mystery Tour. 260/ McKinney Ave. 855-0007. MEDITERRANEAN



D Revisits L’Entrecote. The grande luxe dining room of the Anatole has jumped categories on us since consulting chef Charles Saunders and chef Lindell Mendoza took over. Now L’Entrecote falls clearly into the Mediterranean column, with menu borrowings from Greece, Lebanon, Algeria, Spain and Italy, in addition to France, Openers include such rarities as tiny, grilled calamari swimming with onions and peppers in dry sherry and olive oil-a better choice than two enormous shrimp grilled and served over rather tasteless cumin fet-tuccine tossed with fava beans, sun-dried tomatoes and chive oil. A pan-roasted veal chop picked up flavor from roast garlic, wild mushroom and Madeira, but the best thing about that dish was the creamy polenta that reminded one Southern boy of cheese grits. A fresh tomato sauce adorned with leek, nicoise olives, and tarragon overpower a crisply sautéed salmon steak. The best thing about L’Entrecote’s new menu is the desserts. Just when we thought we were tiring of creme brulée we fell in love all over again with this one flavored with dark rum and studded with dried currants. And profiteroles have never been so distinguished as this pyramid of ice cream-filled puffs bound together with caramel and christened with a waterfall of thick fudge sauce. MEXICAN



D Revisits Matt’s Rancho Martinez Mexican Restaurant. The space has expanded somewhat, so the lines don’t seem as long as they used to. Now you can get to Matt’s half-moon-shaped bean and cheese nachos and the grilled, never fried, chicken flautas in green sauce that much more quickly. The best dish here is still the beef chile relleno with its gooey toppings of Monterey Jack, sour cream, raisins and pecans-a reasonable facsimile of one of the classics of real Mexican cooking. The Tex-Mex platters are faithfully executed-cheese enchiladas are no doubt packed with cholesterol, but you will die happy after eating them. The biggest anomaly here is the monster chicken-fried steak, available three ways: country-style (with white gravy), cowboy-style (with chili, cheese and onions) and tampiqueno-style (with red or green sauce, cheese and sour cream). TAKE OUT



D Revisits Amore (To Go). This is a great idea for a life like mine-Amore, the homey Italian restaurant in Snider Plaza, has opened another door strictly for takeout. There aren’t any refrigerated cases of salads or baskets of cookies and muffins; you simply enter the restaurant by a separate doorway, order off the regular dinner menu and take it all home, hot and ready to eat. We tried bruschetta, long split loaves of bread sprinkled with mozzarella and tomato sauce (a little like French bread pizzas), veal piccatta sided with lemon-“scented vegetables and “Teodoro’s Trio,” a plate of three pastas-lasagna, eggplant parmigiana and ziti with herbed ricotta. The dinner salads that came with the entrees were good, with a strong herbal vinaigrette, and everything traveled well. 6931 Snider Plaza. 739-0502. Inexpensive to moderate.

D Revisits Thai Taste. This is far-and-away the city’s most pleasant spot in which to eat Thai cuisine, with the balconied spaces inside, the sedate music and even a terrace for outdoor dining in fine 1 weather. The food too, is rewarding, including such appetizers as the Thai Taste rolls (the little ones no longer than a thumb) and the fried dumplings stuffed with curried chicken, potatoes and onions. | Our favorite main dish was a special of stuffed and fried game hen. The crispy, lacquered skin contrasted marvelously with the rich stuffing made of sticky rice, pork, cashews, black mushrooms, dried shrimp and Chinese sausage. Crab claws sat atop a bounty of vegetables in a refined yellow curry sauce, while the panang beef, in its red sauce strongly flavored with cazier leaves, packed a more serious wallop. Since the waiter misunderstood our order and brought us spicy noodles rather than the milder Thai ones we ordered, our tongues were on fire by the end of the meal. But we still left more than satisfied-all the food that we thought we were going to take home somehow managed to get eaten before we departed. 4501 Cole. 521-3513. Moderate. -W.L.T.
