THE GRAPES White: 100% Char-donnay. Red: 100% Pinot Noir. Grown where both were born.

THE TYPES Chardonnays from the north (Chablis) have a dry, apple-crisp, almost tart taste. Those from the south are fruitier and ’fleshier:” lush, buttery, oaky. Reds have a fine strawberry-raspberry quality.

FOOD CUES With whites: seafood, veal, fowl and goat cheese. With reds: beef, lamb, game, robust dishes.
