Fearing’s Cheese Crackers

(makes about 80)

4          cups all-purpose flour
1/2       cup cornmeal
1          tablespoon kosher salt
1          teaspoon cayenne pepper
1/2       teaspoon ground course
            black pepper
1/2       pound unsalted butter,
            cubed and frozen
1 1/2    cups white
            cheddar cheese
2          cups whole milk

Combine the flour, cornmeal, salt, cayenne pepper, and black pepper in a mixing bowl with a paddle. Add the frozen butter and mix until butter resembles pebbles. Add the cheese and milk and mix until a dough forms. Roll into logs about 2 inches in diameter. Wrap the dough in parchment and then plastic wrap; place it in the freezer for about two hours. When you’re ready to bake, let it thaw slightly. Slice very thin and bake in a preheated oven at 325 degrees until golden brown.
