Okay, I’ve been seeing a lot of crazy stuff on the Interweb recently claiming that you can make ice cream out of two or so ingredients, in a bag, in about an hour. Interweb, I just don’t know about that! I think I’d rather make the drive to Baskin Robbins than consume some potentially dangerous at-home culinary experiment in a plastic bag. But, of course, this wouldn’t be the first thing the Internet produced that I was initially and wrongfully skeptic about (I’m cool with podcasts now!), so I decided to give this a go.
In honor of St. Patrick’s favorite hue, I found a very safe looking minty vegan ice cream that looks about as hard to make as a quesadilla. Let’s do this thing.
Honestly, ice cream seems like a bit of a stretch in the end. The only thing I did differently from Petite Allergy Treats was use a Le Creuset dish instead of the “metal bread pan” suggested when freezing, so I can’t imagine I was too off base here. But despite my odd result, I will say this: the stuff tasted good. I don’t care that it sort of looked like Play-Doh you could eat, I would still make it again because it was as easy as cooking a quesadilla (to put in in perspective, I was able to make this “ice cream” during three Pretty Little Liars commercial breaks), and anything with chocolate chips and that much sugar gives me all kinds joy.

Directions
- Combine your spinach and 1/4 of the coconut cream (0r in my case butter) and blend until smooth
- Add in everything else (hold the chocolate chips) and blend again until smooth
- Fold in the chocolate chips
- Place in the freezer (will freeze in two hours if your coconut cream or butter was already chilled and in six hours if not)
