We don’t pay attention to every food-glorifying holiday, but when we see one we really love, we like to celebrate. Below are a few ways you can get in the spirit for October 1, aka National Homemade Cookies Day—not to be confused with December 4, which is National Cookie Day. (More sweet things in store!)
1. Pull Out Your D Cookbook
Okay, so maybe you don’t own D: The Cookbook. (It’s okay; your secret is safe here.) But whether or not you have D’s glossy recipe book in your collection, you can still make this killer Oatmeal Raisin Cookie recipe by local chef Jeff Harris.
What You Need
- ½ pound butter, unsalted, and softened
- 1 cup light brown sugar
- 1 cup granulated sugar
- 2 eggs
- 1 1/3 cups all-purpose flour
- ½ teaspoon kosher salt
- ½ teaspoon baking powder
- 3 cups oats
- 1 cup walnuts, chopped
- 1 cup golden raison, chopped
Directions
- Preheat oven to 350°
- In the mixing bowl of an electric-stand mixer, cream the butter and sugars together. Beat in 1 egg at a time.
- Mix all dry ingredients together, then add to butter mixture. Fold in nuts and raisins.
- Roll cookie dough into 3-inch logs using parchment paper. Slice into 3-ounce cookies and bake at 350° for 12 minutes
