D dining critic Eve Hill-Agnus headed Texas Hill Country this summer in pursuit of a story. What she had found was a wine region of revolutionary vintners growing new varietals and expanding winemaking methods. The relatively young wine industry there is building upon a Texas Hill Country means—that terroir’s characteristics and idiosyncrasies. It’s an exciting time for the burgeoning wine region.
