I sincerely hope that by now you have already heard of Trompo. Even better, I hope you’ve been able to try their exquisite tacos. I mean, we live in a city filled with great tacos, but I don’t think it’s a stretch to say that Trompo is one of the best. Remember in 2016 when Bon Appétit magazine listed Trompo among their top 50 new restaurants in the country? It was deserved, folks.
But anyone who’s visited Trompo at their Singleton Blvd. location (just west of the Trinity Groves development) can certainly attest to the rather bare-bones nature of the establishment. It’s got to be one of the most spartan operations in town. A single small room, a single window for ordering tacos, two stand-up counters for eating, no seats, no tables, not a single piece of art or ornament on the walls. It’s very much about the tacos, which has honestly always been enough for me.
But Trompo’s days at this Singleton location are numbered, as they will soon open a new restaurant in Bishop Arts. As if you needed another reason to love Bishop Arts. The new restaurant is located at 407 W 10th St. It’s a new mixed use development just off Bishop Ave., on the west end of the district. Construction surrounds the building as several new neighboring shops are clearly on their way in the near future.
The new Trompo features a large outdoor walk-up window where all patrons will order their food. There will be outdoor tables in a shared patio/grassy hang-out space and there’s also an indoor dining room with several tables. The restaurant boasts one of the largest outdoor spaces in Bishop Arts, and will likely host musicians and other events.
As for the menu, we’ll be seeing a few new additions. They’re adding a Saturday and Sunday brunch option, the “tacos mañaneros,” which are filled with various “guisos” or stewed meats will change regularly. There will also be a burger slider featuring a beef patty, trompo meat, salami, mozzarella, and avocado. These items accompany their regular menu of tacos and quesadillas.
Expect to see the new location open within the next few weeks, which also means the end of the Singleton Ave. shop.
