Brrr it’s cold outside and a warm bowl of winter minestrone soup is perfect on this cold night. I used elbow macaroni because it’s what we had in place of tabetti and butternut squash in place of zucchini and tastes great and full of vitamins during this cold/flu season. The key for this soup…never forget to add the rind of some Parmesan cheese to the soup while it simmers, add so much flavor. Hope everyone is staying warm this cold winter weekend!
