The Localist: Cheeza Pleeza Cheese Spreads

The spreads can be eaten alone or used as a gourmet additive.

I picked up my container of Cheeza Pleeza a few weeks ago at Market Provisions in the Dallas Farmers Market. Toast is one of my favorite meals, so finding something that enhances it is always exciting. Little did I know, Toast Topper, is actually a side product of the bigger Cheeza Pleeza business created by Lynn Wilford Scarborough of Arlington.

Cheeza Pleeza was birthed out of Scarborough’s disdain for pimento cheese and her mother’s love for it. While in a nursing home, her mother asked her daily to bring in a pimento cheese sandwich, as it was one of her favorites. Scarborough had always hated the ratio of cheese to mayonnaise in such spreads, and so she decided to make some of her own so that she could please her mother and have lunch for herself as well. This was how her best seller, the Five Star Savory Pimento Cheese, was created. It contains six different cheeses, 20 spices, a touch of mayo, sour cream, pimentos, pickles, onions, and chives. At this time in 2016, Scarborough was already selling her line of homemade jams, jellies, and honeys at local farmers markets. She began incorporating the cheese spread into her weekly offerings, mainly due to the fact that she had leftovers and needed to get rid of it. The pimento cheese was a hit so she began experimenting with different recipes.

In January of 2018, she began selling Cheeza Pleeza as a full time addition to her weekly menu. Her best sellers are now Five Star Pimento, Hatch Green Chili, Greek Holiday, and Cajun. Scarborough’s motto is “Cook once, eat five times.” Her intention was for all of her spreads to be a great addition to any meal of the day. They are perfect on eggs in the morning, as a dip for a veggie stick snack, spread on a sandwich at lunch, and used as a base for dishes like grilled fish and dirty rice. All of her spreads can be eaten alone or used as a “gourmet additive.”
