DRAGONFRUIT SMOOTHIE TIME 🥝💫 finally home with no visitors after being on the road for the past 2 weeks! from alternating being in atlanta, michigan, austin + back home in dallas, i’ve gone out to eat A LOT – like at least once a day. while i love to go out to lunch or dinner and experience new foods being made for me, i’m SO happy to be back in my own kitchen and start eating what makes my body feel great again! something i’ve found to be important is to not to beat yourself up on vacation while going out to eat more frequently than you’re used to – enjoy the experience! it’s not worth getting caught up in ordering “the healthiest thing on the menu” every time if you’re not going to be satisfied afterwards – opt for what sounds DELISH to you in the moment! 🤤 so back to the smoothie – i added dragonfruit (one of my fave exotic fruits ever) to this concoction for an extra boost of vitamin c, a, b1 + b12 as well as fiber and this combo is BOMB (currently devouring it). i blended frozen coconut meat🥥, frozen kale, frozen organic strawberries🍓, half a fresh dragonfruit, 1 scoop @vitalproteins collagen peptides, 1t @sunpotion ashwagandha, 1t @navitasorganics maca, a dash of ceylon cinnamon (balances blood sugar) with a splash of almond milk. I’m not sure if I should call this a frittata or a pancake or a tart or…. 😀 Last night I watched a video from @nytfood with @markbittman putting together an almond lemon pan tart and I knew I had to try it in the morning. I didn’t follow the measurements, but the idea was to mix eggs with ground almonds and cook them in a pan. So for this one I used 3 pasture raised eggs, 1/2 cup + 1 tbsp ground almonds (you can use flour but I just ground some blanched almonds a little less finer than what you would get with almond flour). I used zest of one lemon, 4 tbsps of coconut cream (full fat), 1/4 tsp almond extract, 1/2 tsp vanilla extract, 1 tsp monkfruit sweetener (feel free to use more if you want but you can also add some sweetener on top, something like Yacon syrup) and a handful of fresh blueberries. Heated a seasoned cast iron pan on medium heat, added 2 tbsp of French, unsalted butter, and poured the batter (all the above ingredients mixed well) into the pan. Let it sizzle a little bit on the stove (about 1 minute), added the blueberries in top, some more ground almonds, and put the pan in the oven, preheated to 400F. It cooked in about 12 minutes. 😋 Just a different way of making breakfast, if you’ve had enough of simple eggs or normal pancakes 😀. This could be an easy to make breakfast / brunch or even dinner for kids. ☀️ What do you think? Would you try it? Chicken nuggets and ketchup for the holiday weekend ❤️ I made my sweet potato chicken poppers with white sweet potato and it was delicious! I definitely like the color of orange sweet potato in this recipe better, but it’s still just as yummy. The only AIP reintro in this whole dish is black pepper 👍 . . I paired the poppers with an arugula side salad with avocado and nightshade free ketchup from @eat_heal_thrive . If you didn’t have the pleasure of knowing Martine, she was an INCREDIBLE human being. She had such a gorgeous spirit, silly sense of humor, and her recipes were amazing. It’s been a week this year since we lost Martine entirely too early, and I miss her sweet spirit dearly.
