The last two years have proved Mack Simpson can sell grilled cheese sandwiches. The partner of Dallas Grilled Cheese Company in the Bishop Arts District announced he is “spreading the Gospel of the Cheese” to a 2,500 square foot space in Mockingbird Station. Construction has already started in the space formerly occupied by Smashburger.

The menu boasts 18 specialty grilled cheese sandwiches along with appetizers, soups, salads, and desserts. They also feature 23 taps of local craft beers. The crew is working as fast as they can to open by January 15 which coincides with the original location’s third anniversary.
