Dallas Grilled Cheese Company Expands to Mockingbird Station

A bit of Bishop Arts moves into Upper Greenville.

The last two years have proved Mack Simpson can sell grilled cheese sandwiches. The partner of Dallas Grilled Cheese Company in the Bishop Arts District announced he is “spreading the Gospel of the Cheese” to a 2,500 square foot space in Mockingbird Station. Construction has already started in the space formerly occupied by Smashburger.

The menu boasts 18 specialty grilled cheese sandwiches along with appetizers, soups, salads, and desserts. They also feature 23 taps of local craft beers. The crew is working as fast as they can to open by January 15 which coincides with the original location’s third anniversary.

That’s very kind of you, but the real credit goes to the entire team of employees and partners, especially founding partner Diana Ezzell and managing partner Matthew Davis. Without Diana’s vision, Matthew’s operational abilities and ALL of the partners and employees playing their roles with creativity and skill, there simply wouldn’t be a Dallas Grilled Cheese Co., much less a new one going into an exciting location.
