The Scoop: Gerald Smith Named Executive Chef at Tillman’s Roadhouse, and More

There’s not always enough time in the day to skim a lengthy, re-worded press release that’s been stamped with “breaking” or “exclusive.” And some stories don’t warrant an entire page of prose. Each week we’ll gather the most important tidbits of Dallas food news and post them here, on SideDish. Because sometimes all you need is the scoop.

Gerald Smith named new executive chef at Tillman’s Roadhouse: Chef Gerald Smith, who comes from Hogsalt Hospitality in Chicago, is shaking up the menu at this longstanding Oak Cliff restaurant.

“We are excited about Gerald leading the culinary execution at Tillman’s Roadhouse,” says Jeffrey Kollinger, CEO of Innovative Hospitality Group which owns Tillman’s Roadhouse. “He is energetic and creative and will bring a new twist to Tillman’s Texas cuisine. Since purchasing Tillman’s in 2016, we’ve been evolving the restaurant. Hiring Gerald and bringing his talent to the Dallas restaurant scene is the most important step.”

About Smith, according to the release:

A graduate of the Culinary Institute of America, chef Smith has studied under and worked alongside some of the best chefs and restaurateurs across the country, including Jean George Vongerichten, Mario Batali, Stephen Starr, Rich Melman and Brendan Sodikoff. Most recently, chef Smith was Culinary Director at Hogsalt Hospitality in Chicago. Prior to that, he honed his craft as corporate executive chef for Lettuce Entertain You Restaurants, overseeing multiple new concept openings in his time with the legendary Rich Melman. Prior to that, he was chef de cuisine for James Beard Award winning Stephen Starr at STARR Restaurants in Philadelphia, Pennsylvania.

Mamoun’s Falafel to open in the West Village: The fast-casual falafel shop, based in New York City, will open its first Texas outpost this winter. According to the release:

Since opening in the heart of Greenwich Village in 1971, Mamoun’s Falafel has been dishing out a menu of authentic Middle Eastern cuisine, including shawarma, hummus, baba ganouj, and baklava along with their famous namesake falafel…Mamoun’s Falafel recently partnered with Fransmart, the industry leading franchise development company behind the explosive growth of brands like Five Guys Burgers and Fries, The Halal Guys, and Qdoba Mexican Grill, as their exclusive franchise development partner to grow the brand in major U.S. markets. Dallas will be the first of many franchised Mamoun’s Falafel restaurants to open outside of the East Coast.

The restaurant is slated to open this winter and will be located at 3839 McKinney Ave., Ste. 145 in the West Village.

Kitchen is opening in Lakewood: East Dallas will soon have a new grab-and-go spot. According to the release:

The heart of the home, the place where everyone gathers – we all know it as the kitchen. On November 1, that evolves into Kitchen, a new mini food hall and takeout market concept from Dallas restaurateur Scott Jones. While concepts may rotate from time to time, Kitchen launches with Jack’s Modern Southern Kitchen and Dallas Meatball Kitchen as its first two featured menus. Kitchen is located at 6041 Oram in East Dallas and offers dining, takeout and delivery options for those who crave the taste of homemade…Upon opening, Kitchen will include Jack’s Modern Southern Kitchen, featuring classics from the southern fast casual menu that was such a big hit from its former location on Greenville Ave. The deliciousness is back, starting with Chicken in a Dumplin’, Jack’s signature biscuit dough rolled out and stuffed with roasted chicken and veggies, browned and finished in a chicken jus, served with more roasted chicken, braised carrots and green peas…The second concept within Kitchen is Dallas Meatball Kitchen, a meatball-centric concept that pays full homage to this Italian staple.
