Diane and Justin Fourton of Pecan Lodge have come full circle. Long before smoking insanely splendid beef ribs, this couple made their living by catering. They traveled a lot. They collected recipes. They became the people you had to have cooking for your party.
When they moved to Dallas, they started cooking at catering at the Dallas Farmers Market in 2010. The short version is they eventually moved to Deep Ellum. (The long version is here.) Deep Ellum has been good to Pecan Lodge. The Fouton’s have acquired extra space and expanded their operation to include a catering service. Just in time for the holidays.
Now you can watch people stand in line from the comfort of your own home or office. Or wedding. Pecan Lodge Catering offers smoked brisket, house-made sausages, beef ribs, and other meats. There’s also a full menu of sides such as braised collard greens, fried okra, three-cheese macaroni, Aunt Polly’s famous banana pudding, and made from scratch peach cobbler for all occasions.
They’re pulling their original smoker Lurlene out of semi-retirement and adding additional staff. If you don’t have a place big enough for your party, you can hold your private event at Pecan Lodge on Sundays through Thursdays.
