Double salad dinner and another take on a classic comfort food: potato salad. In my family we would have potato salad mostly in the fasting periods (in Romania orthodox fast is practiced, which is basically the same as vegan). So we would make a big bowl of boiled potatoes, mixed with onions, oil, vinegar, salt and pepper, and lots of olives. I used to love it! 💙 My #plantparadox compliant salad is made with x2 boiled sweet potatoes, one with orange flesh and one with white flesh (I boiled them whole, with skin) + mix of olives + red onion (put it in iced water 30 mins before slicing, the water will take away some of the strong taste of the onion so it will not overpower the salad) + dressing made of olive oil, 🍋 juice, dry coriander leaves, Dijon mustard, grated fresh ginger, horseradish, salt and pepper. ☀️ On the next page (swipe right) is a big and simple arugula and baby spinach salad, with black radish and roasted mushrooms, dressed with olive oil and lemon, salt and pepper. 🌱 They really worked well together 😊.
