On June 20, Deep Ellum cocktail den HIDE will debut a new seasonal menu. Scott Jenkins, HIDE’s beverage director, and his team have created a list of drinks that take inspiration from a summer garden. New additions include:

The Lotus: pisco, lychee, green tea, coconut-jasmine rice cordial, lemon
Dem Apples: amontillado sherry, apple, seed cordial, malic acid
Treydwind: aged rum, East India sherry, clarified lemon, apricot, tiki bitters
St. George & the Dragon: tequila blanco, green chile vodka, fino sherry, clarified lime, rosemary, eucalyptus tincture
The Grass is Greener: cilantro and dill vodka, aged lemongrass-mint white balsamic, clarified lime
Midas Touch: golden beet gin, lemon, grapefruit, honey, egg white
Clean Cut Kid: rye, suze, coconut white balsamic, lemon-coriander tincture, walnut bitters

The new menu will also include boozy, house-made popsicles.

“We had some fun creating these drinks using fresh ingredients straight from our on-site hydroponic herb garden,” Jenkins says. “[These are] the innovative techniques we’ve become known for.”
