Tom Parlo Appointed Executive Chef at Rosewood Mansion on Turtle Creek

The new chef will start reviewing menus in early November.

Chef Bruno Davaillon left the Rosewood Mansion on Turtle Creek nearly a year ago, and until now, the restaurant has been without an executive chef. News comes early this morning that chef Tom Parlo has stepped into this role.

Raised in St. Petersburg, Florida, Tom Parlo developed a love for the arts at a young age. He embarked on a lifelong journey of learning by attending culinary school. His passion for food began while helping his mother cook for the family, preparing complex dishes from scratch using unique ingredients. Early on in his career, Parlo trained in the kitchens of Michelin-starred chefs including Vincent Klink, Dieter Müller and Gerhard Gardner. Experience in Europe and Asia provided world-class creative vision, detailed execution and mastery of classic French techniques. His exceptional travels have taken him to many countries, offering a global perspective paired with a strong belief in honoring the integrity of ingredients.

Parlo’s singular innovation and skill have led him to many of the top culinary destinations in America. In New York City, Parlo worked at Lespinasse in the St. Regis Hotel, a Forbes five-star luxury hotel and restaurant, under acclaimed chef Gray Kunz. He was subsequently named executive sous chef of Four Seasons New York. In 2003, as Executive Chef of Mandarin Oriental Miami, Parlo led two nationally-acclaimed restaurants and later joined the iconic Biltmore Hotel in Coral Gables, Florida overseeing the Palme d’Or. In 2013, he was appointed Executive Chef of St. Regis Bal Harbour and most recently he was tapped to open the luxurious Hotel Granduca in Austin, Texas.

As Executive Chef of Rosewood Mansion on Turtle Creek, Parlo will join an elite group of brilliantly talented chefs who have helmed the extraordinarily famous kitchen. He will oversee all culinary operations and with particular emphasis on the highly-acclaimed legendary Mansion Restaurant. His philosophy is to cook from the heart, curating refined cuisine that explores balanced flavors while showcasing the highest-quality ingredients. The proud heritage of exquisite dining will evolve as Executive Chef Parlo leads the restaurant’s culinary team to offer an immaculate, inviting and authentic Texas experience.

When he is not immersed in the kitchen, Parlo enjoys practicing meditation and spending time outdoors. A lifelong student of the culinary arts, he has collected a library of vintage cookbooks by trailblazing expert chefs including Thomas Keller, Daniel Humm and Jean Georges Vongerichten. He and his wife Michelle have two sons.

Parlo will start reviewing menus in early November once he has settled into his role and will be leading the entire Rosewood Mansion on Turtle Creek culinary team including chef de cuisine Nick Walker, and pastry chef Nicolas Blouin.
