The Localist: Just Pie Pineapple Paradise Pie

Just Pie, a quaint pie shop with two locations settled about 30 minutes east of Dallas, specializes in old fashioned handmade pies that are made fresh daily. The award-winning recipes have been handed down from generation to generation in Shannon Foltz’s family.

A few of my favorites include buttery butterscotch, fresh berry custard, and pineapple paradise. The pineapple paradise is quite possibly the be-all and end-all of summer desserts. A flaky, handmade crust is filled with a creamy custard made of pineapple chunks and coconut. The pie is then topped with a perfect amount of meringue.

The Foltz family understands that Dallasites may not want to make a trek across Lake Ray Hubbard to grab a pie so they have made it easy for you to find their products all over the Dallas-Fort Worth area. You can find their pies at several local farmers markets. You can pick a pie from their refrigerated pie case, or you can call ahead and order a pie from one of their shops and then let them know which farmers market you would like to pick it up from on Saturday. Incredible business model.
