Valery Jean-Bart has been baking for more than a decade. “It really started with my mom,” he explained over the phone. “We would make a cheesecake every Sunday.” Jean-Bart’s mother was diagnosed with terminal cancer in 2007 and her son cared for her at his home. “She would stay at the house and we’d spend the whole week discussing what kind of cake we were going to bake,” he says. That went on for five years until her passing in 2012. “This whole business is for her memory.”

Jean-Bart and his business partner, Christopher Reece, started Val’s Cheesecakes in late 2012. They haven’t had a storefront (until now). They sold cakes on their website and supplied a number of restaurants in town. Currently their products can be found at Ascension, Opening Bell Coffee, Skewers Kabob House, and The Cedars Social. “We’ve been baking from the St. Paul United Methodist Church,” he says. “Sometimes in the morning people will come in and be like ‘Hey, where’s Val?’ I knew we needed to provide them with a space [to get the cakes].”

Val’s Cheesecakes will soon call the tiny hut at 3906 Maple Avenue (next to the Grapevine Bar) home. “It reminds me of the little shack restaurants in Austin,” Jean-Bart explained. “That’s exactly what I wanted.” While there won’t be any indoor seating, customers can order to-go items or enjoy a slice of cake while seated on one of the chairs on the sidewalk. Folks who are drinking at the Grapevine will also have access to the shop’s offerings through a back window on the patio of the bar.

As for the menu, expect a variety of cakes with fun Dallas names such as The Lemmon Avenue: a lemon cheesecake on a lemon-poppyseed crust topped with lemon curd, and The Maple Avenue: a maple cheesecake topped with pecans on a maple bacon crust. They’ll also feature one savory cheesecake per month. There’s a smoked salmon cheesecake, taco cheesecake, bacon cheddar cheesecake, and, drumroll, a brisket cheesecake.

The shop will offer cakes in jars and by the slice, and customers can pre-order entire cakes — most of which are $30. The savory varieties range from $50 to $55 each. The shop will also sell oatmeal, cranberry and bacon cookies, chipotle pepper brownies, and possibly ice cream.

Val’s Cheesecakes will be open Tuesday through Sunday from 4 p.m. until 10 p.m. They’re tentatively planning to celebrate their grand opening on Tuesday, June 30. But that could change. In the meantime head over to their Instagram page to sneak a peek of what they have to offer.
